Pickled asparagus is delicious and so easy to make! There are 2 recipes I’ve tried and both are quite good. The difference between the 2 recipes is the type of brine. Each has its own unique flavors, so give both a try!

a. Lacto-fermented-asparagus-pickles by Kitchn. The brine is water with salt, flavored with green onions; no other pickling spices. A fat orange slice anchors the asparagus from floating to the top.

 

b. Asparagus refrigerator pickles by the Spruce Eats. The brine in this recipe is water + apple + salt + pickling spices. Use fresh dill if you can…it makes a difference.
